I need roll advice

I have been contacted by a small coffee shop to make thier caramel rolls for them on the weekends.
I have a recipe I like but the dilema is I am trying to figure out a way to make them ahead of time. They are ok with baking them off themselves each morning.
How do I change my formula for a slow overnight rise in the refrigerator or so I can make the rolls place them in the caramel and freeze them unbaked??
